Peanut Butter Chicken

Prepare your chicken any way you want - bake, shred, saute... I usually just use leftovers. Tonight I plan on chopping up some chicken nuggets. So seriously, any chicken works. Or pork, or beef. Or just serve the sauce over rice or noodles without meat.

Make the sauce and toss it with the chicken. Serve it over buttered rice.

  • 1/3 cup peanut butter, softened
  • 3 tbsp water
  • 2 tbsp soy sauce
  • juice from 1 lime
  • 1 tbsp minced ginger
  • 1/2 tsp brown sugar
  • 1 clove garlic, minced
  • 1/2 tsp red pepper flakes (less if for kids so it's not too spicy)
  • salt to taste
Whisk together all ingredients in a small bowl. If needed, microwave peanut butter for a few seconds first to soften it for easier whisking.
